Overall, the process of making soft cheese includes five major stages whereby the thickness of the initial liquid is increased, beginning with combining water and milk to create a mixture and ending with producing end products.
The process commences with mixing water and milk to form a homogeneous liquid. Following this, the mixture is refrigerated at 5 degrees Celsius for 2 hours before adding salt. The fermentation of the previously processed mixture is brought about under heating conditions, at 35 degrees Celsius for 2 hours.
The process continues with turning the water particle of the fermented liquid into steam at 100 degrees Celsius for 8 hours, a significant difference from fermentation conditions. Besides, the wastewater is turned out of the system before the next steps. In the next stage, the remaining part is risen the temperature to 5 degrees Celsius for 16 hours. The process concludes when the cooled mixture flows through a filter to form end products, soft cheese.
