The map and the chart given refer to the willingness to eat insect in many countries in the world and its price compared to other most commonly accept source of protein.
Among the explored countries, Mexico, Peru, and Thailand were the ones that better accepted this new concept, with 71%, 58%, and 56% of willingness, respectively. Whereas South Africa, UK, US, Australia, Spain, India, and Russia, were the countries with the lowest willigness, ranging from 32 to 39%. Brazil and China fit in the middle of the ranking, the willigness to eat insect based products in these two countries were 45% and 44%, respectively. There is no information regarding other countries in the world.
An interesting finding is that the percetange of willingness got to be higher than the percetange of unwillingness in Mexico, China, Peru, Brazil, and Thailand. Perhaps this is due to the fact that these countries have an extensive are of preserved habitats, which might strongly influence its culinary. However, futher studies is need to better understand the relation of this finds.
The chart shows the difference of prices among several sources of protein, including beef, pork, chicken, and insects. Surprisingly, the price per kilo of insects products are significantly higher than the other aliments. The order from the most expensive to the cheapest souce of protein is insects, beef, pork, and then chicken. However, as previously mentioned, the price as given per kilo which is a relevant aspect asit needs a considerable amount of insects in order to achieve one kilo.
